Cabbage Thoran

Heat coconut oil, add mustard seeds, urad dal, and curry leaves. Add chopped veggies. Mix well. Add grated coconut and mix well. Cook for another 2-3 minutes. Serve hot with rice or roti.

Vegetable Upma

Heat oil and add mustard seeds, urad dal, and curry leaves. Add chopped vegetables and sauté for 2-3 minutes. Add semolina and roast. Cover and cook on low heat. Serve hot with chutney or pickle.

Mixed Vegetables Sambar

Mash the cook dal. Cook until vegetables are tender. Add mashed dal to the cooked vegetables and boil. In a separate pan, heat oil for tempering. Add the tempering and simmer for 5 minutes.

Oats Idli

Roast oats and grind them. Heat oil add mustard seeds, urad dal, and curry leaves. Add chopped vegetables. Grease idli molds with oil and pour the batter into them. Steam for 12-15 minutes. 

Ragi Dosa

Mix ragi flour, rice flour, chopped onion, green chilies, curry leaves, and salt. Heat a non-stick pan. Pour a ladleful of batter. Drizzle oil around the edges and cook until the dosa turns crisp.
